What the standard actually requires

GOLS — the Global Organic Latex Standard — is run by Control Union, a certification body, not by a government. It is a private standard, which is worth knowing up front: it is a promise audited by a company, not a law. Industry

The headline requirement is the one everyone quotes, and it is worth quoting exactly rather than rounding off. From version 3.0 of the standard:

"The product shall contain a minimum 95% certified natural rubber latex of its total weight of polymer content. A maximum 5% of processing chemicals and/or filler content can be found in the final product, not including approved additional materials/accessories."

Two details in there change what the number means.

First, the 95% is of polymer content, not of the mattress. Polymer content means the rubber part. Fillers and processing chemicals are measured separately, and they get their own 5% ceiling. So "95% organic" does not mean the slab is 95% organic material by weight — it means that of the rubbery stuff, at least 95% is certified organic latex.

Second, it is tested rather than declared:

"The status of the polymer and filler percentage must be verified via content analysis test(s)."

That is the difference between a certification and a marketing claim. Somebody puts the material in a laboratory. Industry

The clause that matters most when shopping

If you are trying to work out whether a mattress is real latex or a blend, this is the sentence to know, and it is not the 95% one:

"The product shall not contain synthetic latex and/or non-organic natural rubber latex."

The standard's own content table is blunter still. Related to polymer content, the natural latex portion shall be 100; the synthetic latex portion shall be Zero. Industry

This matters because "latex" is not a protected word. A mattress can be sold as latex while containing a styrene-butadiene blend, and nothing on the tag has to tell you. A GOLS certificate does tell you, because the standard bans the blend and requires a content test to prove its absence.

So if the question in your head is "is this actually rubber from a tree, or is it part synthetic?" — GOLS answers it. What it will not do is answer the question in reverse. Plenty of latex is 100% natural and simply not organic, and it carries no GOLS certificate at all. Absence of GOLS tells you nothing about blending; presence of it rules the blend out.

The emission limits nobody quotes

This is the part of GOLS that gets left out of every explainer we could find, and it is the part most relevant to anyone worried about what a mattress gives off.

Section 4.7.2 of the standard sets pass/fail limits measured in a test chamber, drawn from the ecoINSTITUT test criteria for mattresses:

The nitrosamine line is the interesting one. Nitrosamines are a family of carcinogens that sulfur-cured rubber can form, and the limit is flagged "only latex product" — the standard is targeting a known risk of this specific material rather than applying a generic list. Whoever wrote it knew what latex does.

What this does and does not tell you. It means a GOLS-certified latex core has been through a chamber emission test and passed. It does not mean the results are published: the certificate records a pass against a threshold, and the actual measured numbers are not something a buyer can look up. What GOLS does not cover

The scope is the latex. That is narrower than most people assume from a label on a mattress.

The standard's own labelling rule is unusually honest about this. It requires the product name to carry the phrase "Made with ≥95% Certified Organic" — a wording that concedes the product is made with the certified material rather than being wholly certified. Industry

Is a GOLS label worth paying for?

It depends entirely on which question you are trying to answer, and this is where most buying advice goes wrong by treating certifications as a general safety score.

If you want to know the latex is not a synthetic blend: yes, and it is the cleanest answer available. The blend is banned and the ban is tested.

If you want organic farming and processing: yes, that is what the standard was built for.

If you want assurance about emissions: partly. The testing is real and the limits are specific, which is more than most certifications offer. But you get a pass, not a number, and the threshold is what was passed rather than what was measured.

If you have a latex allergy: no, and this is the important one. GOLS certifies that the latex is organic and natural. The proteins that cause latex allergy come from the tree — organic certification does nothing to remove them, and arguably guarantees their presence. A GOLS certificate is not a safety signal for an allergic person; if anything it confirms the material is the real thing.

If you want to know the whole mattress is clean: no single certificate answers that, and any seller implying one does is overselling. Look for GOLS on the latex, GOTS on the textiles, and ask directly what the core is.

Is GOLS certified latex safe if you have a latex allergy?

No. The proteins that cause latex allergy come from the rubber tree itself, and organic certification does not remove them. If anything a GOLS certificate confirms the material is genuine natural rubber latex. It is not a safety signal for someone with a diagnosed latex allergy.
